Jay is in the midst of turning many of the raw ingredients into meals. This pan was cooling on the counter and I just had to snap a photo. Food can be delicious to look at as well as to eat. This dish includes shrimp and onions. You probably could see those even if I didn't point them out. The ginger ended up quite invisible.
The green, however, is nopal cactus leaves (paddles). People eat a lot of these here. They are 'de-thorned' by a worker right in the supermarkets and can be bought as a whole 6" or 8" pad or already sliced. They are supposed to have good anti-inflammatory properties and can be used for treating high cholesterol, diabetes, and allegedly even hangovers!

Yes I see recipes for nopales often. I’ve not eaten them much. I think they taste fine, maybe a little crunchy. Very mild flavour, right! About like chayote, which is quite common in Nepal and probably in Sri Lanka too
In Sri Lanka the cactus are poisonous. Even touching the liquid in them can cause skin rashes.
